Lebanese Spinach And Carrots

INGREDIENTS

  • 1 lb. Spinach, washed
  • 3 medium carrots, sliced
  • 1 medium onion, diced
  • 2 garlic cloves, diced
  • 2-3 Tbsp. Olive oil
  • Salt, pepper to taste
  • 2 Tbsp. Pine Nuts (opt.)


DIRECTIONS

1. In pot on top of stove, saute onions and garlic in olive oil.
2. When soft, add carrots, then Spinach and Pine nuts, seasonings.
3. Bring to boil and lower heat to a simmer. Cook until carrots are done.
